Organic Chef Internship
at Everything Jesus! Ranch ((Seguin, Texas))
This is a 3 month internship with renewals for up to two years that will prepare participants to open a farm-to-table restaurant and operate an organic dairy/produce/livestock farm.
Interns must be high energy, creative and passionate about cooking and eating.
New English language learners from other cultures are given equal consideration for this job. Those whose background is from traditional farming culture are encouraged to apply. We will consider accepting interns who are married/have families that wish to live on the ranch for this position. Culinary arts grads and those with life experience but no formal training are also encouraged to apply.
Learn the process of growing food organically and preparing it according to Nourishing Tradition standards, using healthy fats, bone broths naturally cured pastured meats, raw milk, butter, cheeses and fermented dairy products, sprouted grains, fermented vegetables, raw honey, and ancient grains.
Interns will learn how to prepare and present whole foods so that they are deliciously inviting while sustaining health and promoting healing. This includes:
Participation in the building of a stone bread/pizza oven.
Sprouting and grinding of whole grains.
Wheat-based and gluten-free bread making using traditional sourdough /other natural leavening.
Preparation of fermented drinks: kombucha, kefir, lassi, kvass, etc.
Fermentation of vegetables: how to make a variety of marketable lacto-krauts and pickles How to make raw dairy products, including butters, cheeses, yogurt and creme fraiche
How to milk cows and run a successful raw milk dairy
Slaughter and butcher of poultry and livestock
Preparation and processing of wild meats (deer, wild boar, wild turkeys, etc.).
Local/online marketing strategies for raw foods, pastured eggs and meats and specialty items How to open/sustain a traditional foods restaurant on a small, debt-free budget
Interns will also study Food, Healing, Social Justice and the Bible. This includes:
Healing properties of whole foods and the way nutrition is being used to successfully treat autism, ADDHD, Crohn's Disease, Type 2 Diabetes and other auto-immune and chronic inflammatory ailments in adults and children
The effects of GMO food, preservatives, processed foods, MSG and high fructose corn syrup
The biblical basis for eating organically and seeking the highest nutritional standards possible
Working in our kitchen is considered a ministry position. Part of the training includes learning how to handle preparation of farm cuisine, start-to-finish preparation gracefully, with or without kitchen help.
Interns are responible for daily cleaning--keeping the kitchen, storage and walk-ins clean, and inventory control. Our kitchens are peaceful--no drama, no mood swings, no gossip, lots of praise and respect.
We have a number of quirky processes and sanitation procedures. The successful applicant must be willing to adhere with all kitchen procedures and policies and cheerfully accept repeated correction until these kitchen practices become second nature.
Right now our community is very small, but we expect to grow larger over the next several months, so this is an excellent time to "learn the ropes".

Interns live on our church ranch in comfortable private facilities. All food, lodging and other basic necessities are provided, including a simple living stipend to cover cell phone, auto insurance and other basic personal expenses. This is not an appropriate situation for those who are in debt.
This is a smoke-free, alcohol and drug-free Christian ranch.
