Purpose Statement:
Direct and oversee all food service operations in a manner that will contribute to the mission of the ministry and bring glory to Jesus by providing a ministry of nutritious, good-tasting and appealing meals.

Reports to:
Guest Experience Director

Responsibilities:
Overall operation of the food service program to include menu planning, preparation of meals, inventory and ordering of food, scheduling, cleanliness of the kitchen, cost control within food service budget, and serving hot and tasty meals on time to large groups of up to 500 guests.
● Meal Preparation
o Passion and ability to prepare and serve a wide range of foods skillfully to a large volume of guests
o Ability to serve vegetarian, vegan, gluten free diets and any other dietary needs as needed
o Creativity and group focus in menu planning

● Training/mentoring of Kitchen Staff. Create an environment in the kitchen that is healthy for professional learning & growth as well as conducive to spiritual development.
o Disciple the kitchen staff and interns that work in the kitchen
o Ensure new staff learn proper procedures for safe food handling
o Develop and train full-time staff to help them grow in their professional culinary skills
o Train part-time staff that may have little or no food service experience
o Provide clear expectations, objectives and goals.
o Provide, in writing, notes, recipes, directional guidelines for menus etc… for staff (If needed)
o Develop and nurture a godly, spirit filled atmosphere in the kitchen, where all people who enter will feel welcome and safe and will sense a love for serving others and God

● Cleanliness and health:
o Ensure orderliness and cleanliness of kitchen. Create cleaning plan and implement it
o Ensure cleanliness of dining area and the surrounding area
o Establish adequate protocols for care of all equipment connected with kitchen and dining area, supervises adherence to these protocols
o Leaves kitchen and dining area “tour ready” following each retreat or camp
o Anticipates need for repair and replacement and communicates these needs to Facilities Director

o Food safety: Follow state and local food handling guidelines in the following areas:
▪ Receiving food from outside venders
▪ The handling of food items during meal production
▪ Meet proper internal temps of all foods during service
▪ Proper handling of food items brought back after meals
▪ Proper handling and usage of all leftovers

● Food ordering, delivery and accounting
o Purchases food and supplies and schedules delivery to ensure adequate inventory for all events
o Work within budget guidelines
o Periodically cost out full menu Items
o Documents cost per meals to serve as tool in budgeting and price establishment
o Regularly check pricing and search for like items that may be less expensive
o Coordinate with Guest Relations Director to order sufficient quantities of food products to handle scheduled guest groups

● Responsible for Kitchen Staff scheduling and hours
● Serve alongside Guest Relations Director to facilitate unique needs for groups
General Requirements:
● Operate according to established Tejas protocols and procedures
● Attend Tejas meetings and special events as assigned and requested

WORKING CONDITIONS: This is a full-time, benefit eligible position. This position and opportunity should be viewed as a calling to serve and be part of the Tejas ministry, not just another job. Working hours will be as necessary to accomplish the responsibilities of the ministry. Because of ministry requirements, there will be times when working longer shifts than normal and working more than 5 days in a row will be necessary. The Food Service Director is responsible for scheduling themselves and others in a way that does not create burnout and still meets the required time to achieve the workload and ministry requirements set before the team.
