Pomegranate Gazpacho

Yield: 8 portions


  • 1 quart (950ml) of POM (Pomegranate) Juice
  • 2 cups (475ml) of organic European Seedless Cucumbers, cut into small dice
  • 1 organic whole organic Red Onion cut into small diced
  • 1 cup (240ml) of organic bell Green Pepper cut into small dice
  • 2 whole organic scallions cut into small dice
  • 1/4 cup (60ml) of organic Apple Cider
  • 1/4 cup (60ml) of organic Olive Oil
  • 2 cloves of organic Garlic finely minced
  • 1/2 teaspoons (2.5ml) of organic Ground Cinnamon powder
  • 1/2 teaspoons (2.5ml) of organic kosher Sea Salt
  • 1/2 Tablespoon (8ml) of organic Seedless Jalapenos cut into small dice


  • Place all the ingredients in a large metal bowl mix it together well chill it for about an hour and served.

Summer time is here!! The Pomegranate Gazpacho recipe was the first recipe I wrote in my cookbook "Cooking With His Love." My Lord and Master Chef, JESUS gave this recipe to me. I like to refer to this one as the happy soup.

Pomegranate is the most powerful anti-oxidant of all the fruits. One benefit I find very interesting is that it can help with depression. It also can help with lowering your blood pressure and it has potent anti-cancer and immune supporting effects.

Cinnamon is another ingredient that has many benefits. It is what I call the all around spice. One of its benefits is that it can boost cognitive function and memory. How awesome is that?
